Bacon and Heirloom Tomato Breakfast Sandwich || Recipes

While Ryan and I were spending our anniversary weekend in Palm Springs, we stopped by Cheeky's for breakfast after hearing lots of people rave about the place. I had an amazing breakfast sandwich that inspired this recipe i'm sharing today. I tried it out (with a few tweaks) for my summer brunch with a delicious breakfast salad i'll be sharing later this week too! Add a mimosa and maybe even a donut for dessert and you have yourself a well balanced brunch.



  • sourdough loaf
  • eggs
  • heirloom tomatoes
  • arugula
  • brie
  • bacon
  • butter

How to prep your sandwich:

  1. Slice everything up, your bread, tomatoes and cheese
  2. Cook the bacon and eggs over medium
  3. Toast the bread and butter while it's still warm
  4. Assemble! I topped one slice of bread with 2-3 halves of the sliced tomatoes, followed by 2 small slices of brie, 1 piece of bacon and finally the arugula. Add your second piece of bread and put an egg on top.

We'll finish it off with that breakfast salad I mentioned and a twist on the mimosa!
