vanilla + coconut boozy dessert // recipe

while on my trip in

loreto a few weeks ago

, we took a day to explore the town. one of the local specialties, which was readily available in all of the little shops, was the vanilla liqueur. the shop owners generously offered all of us a taste of the liqueur

which quickly led to the purchase of several bottles. i love liqueurs for champagne cocktails, but had never really used them for anything more than that. one of the girls we were traveling with mentioned adding it to ice cream, so this past weekend i finally gave the simple recipe a try!

we picked up some soy vanilla ice cream and roasted coconut chips. add a few spoonfuls of your ice cream, top with your liqueur, and sprinkle the coconut chips on top to finish of your dessert.

you don't need a lot, with all of the different ingredients, this dessert is just the right amount of rich. so this works perfectly in those small cocktail glasses you save for the perfect occasion. speaking of fun glasses, how fabulous is this little set i picked up while

thrifting in palm springs

? i found a set of two and can't wait to feature them in plenty of cocktail posts!

so now i know, liqueurs are a great addition to ice cream and probably a list of other desserts

do you guys have any other cocktail or recipe recommendations for using them?
